Guest Post! Watermelon Lemonade by Lindsey Crouch of Quiche Queen

I’m really excited about today’s guest post!  The gorgeous Lindsey Crouch is a Dallas-based personal chef and caterer, specializing in healthy food that’s as delicious as it is good for you.  She owns Quiche Queen (heavenly crustless quiches) and True Balance Cooking, teaches healthy cooking classes and has appeared on CBS11 in Dallas as their Fitness Expert! I love a seasonal, refreshing drink this time of year. Who doesn’t, right?! And nothing says “summer” like watermelon! It’s sweet, it’s crunchy, it’s full of water, and it quenches your thirst! Many health experts actually refer to it as a “superfood,” as it’s high in fiber, a great source of potassium, high in Vitamins A & C, and it doesn’t contain any fat or cholesterol! Truth be told, watermelon is actually a vegetable and not a fruit! This is one veggie you can get anyone to eat … or drink!

While living in NYC, my friends and I often frequented the infamous Bubby’s Restaurant for brunch. Luckily for us, we lived in Tribeca, the neighborhood that this great establishment is located, so getting in was usually a breeze! Bubby’s makes an incredible watermelon lemonade, and this was the inspiration for my own variation! There’s nothing like dining in NYC to inspire your own cooking creations when it’s your time to leave.

I love making this watermelon lemonade to sip on at home with my sweet husband, for gatherings with friends, and I even featured it at one of my cooking classes this summer that focused on natural juices and smoothies. Healthy Watermelon Lemonade (Serves 4-6)

Ingredients:

  • 6 cups fresh watermelon chunks
  • juice of 2 large lemons
  • 4 tablespoons (or 1/4 cup) pure maple syrup (Grade B preferred)
  • 2 cups cold water

Directions:

  • Put the watermelon in a blender on high or “smoothie” setting, pushing it down with a tamper if needed, until it breaks down and becomes juice consistency (you may have a little froth on top, which is fine).
  • Squeeze both lemons into the blender with the watermelon juice, catching seeds with your hands (or use a juicer).
  • Finally, add in the maple syrup and water to the watermelon mixture in the blender.
  • Set the blender to medium speed and blend for about 30 seconds until thoroughly mixed.
  • Serve the watermelon lemonade over ice in glasses.

Tequila Soaked Watermelon Wedges

Watermelon-good. Tequila-good. Lime-good. Salt-good. Mix all those things together and you get an absolutely delicious concoction that’s sure to be the biggest hit at any party. I saw this on Pinterest recently and just had to try it. I brought these delightful wedges to the 4th of July party we went to and the trays of watermelon slices were empty in minutes. Just make sure you keep the kids away from these! They look like plain watermelon because the alcohol and salt just absorb right into the fruit. It’s like eating a watermelon margarita, without all the calories of the sweet and sour mix. The sweetener in this is agave nectar so it digests in the body easier than sugar does. It has a really low glycemic index and, while it does have more calories than white sugar, it’s about 40% sweeter so you can use less. Read more about agave vs. sugar here.

Tequila Soaked Watermelon Wedges (serves 10-15 depending on size of watermelon)

Ingredients:

  • 1 seedless watermelon, quartered and cut into 1-inch-thick wedges
  • 3/4 – 1 cup agave
  • 1/2 cup water
  • 3/4 cup tequila
  • 1/2 cup Triple Sec
  • 2 limes, halved or cut into wedges
  • margarita salt (or any course salt will do)

Directions:

  • Arrange watermelon in a single layer in two 9-by-13-inch baking dishes.
  • Bring agave, water, tequila, and Triple Sec to a simmer in a small saucepan. Cook, stirring, until agave dissolves, about 30 sec – 1 minute. Let cool slightly. Pour syrup over watermelon wedges, and refrigerate for at least 45 minutes. The longer you let it sit in the tequila mixture the better!
  • Remove watermelon from syrup, and arrange on a platter. Squeeze limes over melon, and season generously with the course salt.
  • Serve and enjoy!

Happy Things

Happy Friday!  I’m been having a nice few days off, lounging at home, seeing friends and enjoying some much needed rain and gloomy weather!  I recently finished 50 Shades of Grey and was so massively dissapointed by the horrendous writing, lack of plot and the constant use of the phrases Jeez  and Oh my that I can’t couldn’t bring myself to buy the last two in the trilogy.  Instead, I whipped through Gone Girl by Gillian Flynn this week, one of my favorite authors.  I suggest all three of her books if you like thriller and crime novels. Her writing is outstanding.  I’m now onto Savages by Don Winslow, so I can read the book before I see the movie (can’t wait!).

Watermelon Breeze Cocktails

Our Memorial Weekend was full of great friends, delicious food, sun, swimming and creative cocktails. One of my best friends, Pala Nicole, and I whipped up an insanely delicious and skinny cocktail on Saturday that even had the boys putting down their beers and snatching our glasses for more sips. Of course this was after Jon stated he did not like “fruity drinks” and did not want one of his own. :)

Pala Nicole also helped me come up with the very popular and tasty Basil Lime Vodka Freeze, so we are on a roll with delicious and low-calorie drinks. We are going to make this our new tradition whenever we hang out…coming up with new and skinny (and strong!) cocktails.

We made these when it was already dark out so the pictures aren’t as pretty as they would have been in natural sunlight. Oh well.

This cocktail is a simple and quick combination of watermelon vodka, fresh watermelon and ice. That’s IT! It’s not too sweet and it tastes like real, fresh watermelon. Not artificial tasting at all. It’s really refreshing and the only calories are technically from the watermelon vodka since watermelon is mainly water and extremely low in calories.

Pala Nicole, her fiance Adam, Jon and I spent about 30 minutes trying to come up with a name that would do this delicious cocktail justice. Call it whatever you want…just make it! It’s THAT good. You’re welcome! :)

  • 4-6 shots of watermelon flavored vodka (we used Smirnoff)
  • 1/2 of a fresh watermelon, cut into chunks
  • 2 cups of ice

Directions

    • Put all ingredients in a blender and blend until mixed well
    • Serve immediately and garnish each glass with a piece of watermelon
